Top Of the Morning to You! -English Muffins

Not very many toasts beat the golden crisped outside and chewy inside of a toasted home-made English muffin. You can eat it with eggs and bacon or with sweet and delicious strawberry rhubarb jam.

Sweet or savory these muffins are a satisfying yet dainty breakfast stand by.

But what is even better then the chewy inside is the fact that you can fry these toasties outside on your awesome big family-friendly propane griddle: perfect for hot summer days when heating up the house with prolonged frying time is furthest from your mind.

Surprisingly, English muffins actually aren’t too hard to make. Some people might be turned off by the pan frying part, but it really is pretty simple.

The dough of these muffins is rather soft and pliable and require a long rising period. This is for the end goal of English muffins-to get as many air pockets for those much loved nooks and cranny’s that beg to be filled with butter. I let my muffin dough rise for a good two hours before shaping into satisfying classic English muffin rounds with a good amount of corn flour sprinkled on both top and bottom. Then let them rest for 15 min so they re-gain their lost height.

When the time comes to fry the rounds, be sure to have lots of butter on the griddle, and I mean lots! Once your butter is sizzling you can go ahead and turn the heat down to medium low and the rest is simple, gently slide on your English muffins careful not to deflate them, and let them fry!

You can occasionally peek at the bottoms to see if they are how you like them. Once they’re golden flip them! And repeat! This is where having a giant griddle really comes in handy. You can do all 24 English muffins at the same time!

Of course there is one rule of English muffins you cannot bend. You must wait until they are COOL before opening them up. They take on a whole different texture once cooled rather then hot.

And there you have your English muffins! Toasted in the morning for breakfast with the right amount of butter they are perfect!
